I had a bad night baking last night 😦 Didn’t get home until late so I started tired and ended up ruining the whole thing! But I have learnt a few thing that I would like to pass along… although you will see the outcome was still chocolaty heaven!

I attempted to make the Chocolate Fondant Cupcakes from the latest Hummingbird Bakery Cookbook – Cake Days. As I use muffin cases instead of cupcake wrappers, the mixture is not quite enough so this time I decided to double the mixture….. well I made 24 cupcakes and a “cakice” (a cake that really looks like a slice!) So note to self: don’t double that mixture!!! I also have moved house and am still getting used to the oven…it heats at the back and the front not so much, so the front cupcakes were still undercooked and the back cupcakes were a little overdone! Grrrrr… Also to see if they are cooked, I lightly pressed the top to make sure it bounced back, this certainly happened but when they cooled they sunk…note to self: use a skewer on this recipe to ensure its cooked all the way through. In the end though I had enough cupcakes to feed the army of workers at HR and then give the left overs to mum and dad to sweeten them up! 🙂

I won’t be uploading this recipe I am encouraging you to purchase the book! It is amazing and I can’t wait to get baking some more! lets hope they are more successful!

This weekend was a little bit on the chilly side, will have to get the fire lit soon!

First up on Saturday we had Pancake Saturday! This week we had apple and cinnamon pancakes!! When mixing these you might think you need to add a bit more liquid before you add the apple, there is no need as the juice you get from grating the apples makes up for this. You will also have to scoop the mixture and the apple makes it lumpy. I will upload the recipe into the pancake recipe section for you all.

Also to warm us up I made Warm Strawberry Cupcakes baked in a teacup (I didn’t have a teacup but I used my creme brulee dishes) This was surprising easy to bake and used basic ingredients. My suggestion is to spread out the layer of jam on the bottom so you don’t end up with a blob on the bottom. When spooning in the cake mixture don’t bother about smoothing this out as the heat does this for you.

Today was a public holiday! Always great when you don’t have to go into work but still get paid for it! 🙂

Today I baked Lemon Cupcakes from the Hummingbird Bakery Cookbook. Delish! This cookbook is my favourite EVER. I use to live in Wimbledon for nearly 2 years and fell in love with the shop at Portobello Road in Notting Hill.

I found that I didn’t have enough mixture for the full 12 cupcakes – but that would be because I used muffin cases instead of cupcake size. Also the amount of zest all up is 3 normal size lemons. To get the zest use a micro-plane grater, if you don’t have one get one! They are easy to clean and you get more zest out of the citrus.
