Warm Strawberry Cupcakes – baked in a teacup

115g butter, softened (plus a bit extra for greasing teacups)

4 tbsp Strawberry Jam

115g Caster Sugar

2 eggs, lightly beaten

1 tsp vanilla extract

115g self-raising flour

6 whole strawberries to decorate


  1. Preheat oven 180*c/350*F/Gas mark 4
  2. Grease 6 heavy round teacups (I used ramekins) with butter
  3. Place butter and sugar in a large bowl and beat together until fluffy and light
  4. Gradually add the eggs, make sure they are well combined
  5. Add the vanilla extract
  6. Sift in the flour and then fold into the mixture
  7. Spoon into the prepared teacups (ramekins)
  8. Once all the mixture is divided place cups into a roasting tin and pour hot water in the tin until water is one third up the sides.
  9. Place into pre-heated oven for 40 minutes, or until golden brown

Hey Peta! I have a few more pics to upload but my laptop went flat! so tonight i will post them and also get the apple and cinnamon pancake recipe up! 🙂
