I had a bad night baking last night 😦 Didn’t get home until late so I started tired and ended up ruining the whole thing! But I have learnt a few thing that I would like to pass along… although you will see the outcome was still chocolaty heaven!

I attempted to make the Chocolate Fondant Cupcakes from the latest Hummingbird Bakery Cookbook – Cake Days. As I use muffin cases instead of cupcake wrappers, the mixture is not quite enough so this time I decided to double the mixture….. well I made 24 cupcakes and a “cakice” (a cake that really looks like a slice!) So note to self: don’t double that mixture!!! I also have moved house and am still getting used to the oven…it heats at the back and the front not so much, so the front cupcakes were still undercooked and the back cupcakes were a little overdone! Grrrrr… Also to see if they are cooked, I lightly pressed the top to make sure it bounced back, this certainly happened but when they cooled they sunk…note to self: use a skewer on this recipe to ensure its cooked all the way through. In the end though I had enough cupcakes to feed the army of workers at HR and then give the left overs to mum and dad to sweeten them up! 🙂

I won’t be uploading this recipe I am encouraging you to purchase the book! It is amazing and I can’t wait to get baking some more! lets hope they are more successful!

Fondant Cupcakes 1Chocolate Fondant Cupcakes

Over the weekend I might be able to whip up a brownie based cheesecake… stay tuned.



  • 1/2 cup self-raising flour, sifted
  • 2 tablespoons caster sugar
  • 1/2 teaspoon ground cinnamon
  • 1 egg, lightly whisked
  • 1/3 cup milk
  • 2 granny smith apples, peeled, grated
  • canola oil cooking spray


  1. Combine flour, sugar and cinnamon in a bowl. Add egg and milk. Whisk until smooth. Stir in apples.
  2. Heat a non-stick frying pan over low heat. Spray with oil. Pour 1/4 cup of apple mixture into pan. Gently spread out with the back of a spoon to a 10cm round. Cook pancakes, in batches, for 2 minutes or until bubbles appear on surface. Turn over. Cook for 1 to 2 minutes or until cooked through
  3. Add ice-cream and maple syrup or perhaps low fat yoghurt


115g butter, softened (plus a bit extra for greasing teacups)

4 tbsp Strawberry Jam

115g Caster Sugar

2 eggs, lightly beaten

1 tsp vanilla extract

115g self-raising flour

6 whole strawberries to decorate


  1. Preheat oven 180*c/350*F/Gas mark 4
  2. Grease 6 heavy round teacups (I used ramekins) with butter
  3. Place butter and sugar in a large bowl and beat together until fluffy and light
  4. Gradually add the eggs, make sure they are well combined
  5. Add the vanilla extract
  6. Sift in the flour and then fold into the mixture
  7. Spoon into the prepared teacups (ramekins)
  8. Once all the mixture is divided place cups into a roasting tin and pour hot water in the tin until water is one third up the sides.
  9. Place into pre-heated oven for 40 minutes, or until golden brown


This weekend was a little bit on the chilly side, will have to get the fire lit soon!

First up on Saturday we had Pancake Saturday! This week we had apple and cinnamon pancakes!! When mixing these you might think you need to add a bit more liquid before you add the apple, there is no need as the juice you get from grating the apples makes up for this. You will also have to scoop the mixture and the apple makes it lumpy. I will upload the recipe into the pancake recipe section for you all.

Also to warm us up I made Warm Strawberry Cupcakes baked in a teacup (I didn’t have a teacup but I used my creme brulee dishes) This was surprising easy to bake and used basic ingredients. My suggestion is to spread out the layer of jam on the bottom so you don’t end up with a blob on the bottom. When spooning in the cake mixture don’t bother about smoothing this out as the heat does this for you.

Well first up, me and my better half Ash have pancake Saturdays…. have been trying out new toppings every week so far we have had…

  • vanilla ice-cream w/ maple syrup
  • wildberry ice-cream w/ maple syrup
  • Bananas w/ maple syrup
  • lemon and sugar.

I am trying out different pancake recipes to find the best one, I think I have nearly mastered it! 🙂 Stay tuned.
